Pimento Cheese

Ingredients

 

2 lbs Vermont White Cheddar, graded

1/4 cup roasted red pepper, chopped

4 green olives, chopped

2 tbsp capers, chopped

2 tbsp garlic, minced

3 tbsp parsley, chopped

1/4 cup Parmesan, graded

4 tsp mayonnaise

Salt and pepper

 

Directions

 

Combine all ingredients in a bowl and mix until well-blended, adding mayonnaise last.
